Three perfect summer cocktails for a the weekend

Sometimes one of the best things that you can do is to turn off your laptop – switch on your favourite chilled out tunes (here’s a couple of our favourites!) and mix yourself a summer cocktail. Here are three simple, gorgeous looking and summer perfect cocktail recipe’s.

Here are a couple of basic items you’ll need to make these cocktails:

  • A cocktail shaker
  • Jigger
  • A fine sieve
  • Julep and mesh strainer
  • Muddler

1. Rhubarb Sour
What you’ll need: 60ml gin – 30ml lime juice – 60ml plus 5 ml rhubarb syrup – 15ml rhubarb bitters – 30ml lemon lime soda – lime wheels for the garnish How to: Pour all ingredients into an ice-packed cocktail shaker and shake until well mixed. Strain into a rock glass filled with ice. Top with a rhubarb syrup and a lime wheel. Place all ingredients in a medium saucepan and bring to a boil over medium-high heat.leave3. Summerset Fizz
What you’ll need: 60ml dry gin – 30ml lemon juice (freshly squeezed) -30ml lime juice, freshly squeezed – 15ml simple syrup – Splash of club soda – Handful of mint How to: Add a handful of mint to the bottom of the shaker and muddle lightly. Add gin, lemon juice, lime juice, and syrup to shaker. Fill shaker with ice. Cap the shaker and shake vigorously until well mixed. Double strain by placing the julep strainer in the shaker and the mesh strainer above the glass. Pour through both strainers into a highball glass over ice, add a splash of club soda. Garnish with remaining mint, if there’s any left.
3. Blueberry Cucumber Gimlet
What you’ll need: 1/4 cup blueberries – more for garnish 8-10 slices cucumber – 15ml fresh lime juice –  15ml simple syrup – 30ml gin How to: Add blueberries and cucumber into a shaker and smash several times with the muddler until juices are released; add lime juice, syrup, and gin, and top with ice cubes. Cap the shaker and shake, shake, shake (like a polaroid picture) until mixed, about 20 seconds. Pour the mixture into a glass, half-filled with ice. Garnish with cucumber slices and blueberries. Enjoy!
